for an incomprehensible reason (my japanese not that good), no okinawa
food was served on the day we went to this hidden restaurant (behind
the yamanote line train track, accessible from ebisu station west
exit).

he was so good that it was worth watching every movement of his hands for good 5 minutes.

while Matsugen serves many kinds of japanese dishes, i felt its soba
was better than any other places i’ve been. pictured is the soba made
in ‘dumpling’ style. according to the local, this is the old style of
eating soba before the noodle making skill developed.
